⏱️ Timing Expectations for Your First Bake

Know when to be home and when to go live your life.

A complete sourdough bake takes about 10–12 hours from start to finish. Most of that time is passive — the dough is sitting on your counter doing its thing while you go about your day. Your actual hands-on time is about 45 minutes, spread across three separate windows. The key to a stress-free bake day is knowing when you need to be home and when you can leave. Here's exactly what to expect.

Window 1 — Be Home (about 3 hours)

This is your morning commitment. Plan to be home and available for the full window.

Each fold takes about 2 minutes of actual work. The rest is waiting. The app sends you a notification when it's time for each one so you don't need to watch the clock — but you do need to be nearby to respond when the timer fires.

Window 2 — Go Live Your Life (4–8 hours)

Once bulk fermentation starts, you're free. This is the longest step and almost entirely hands-off. The app calculates your bulk fermentation time based on your actual dough temperature — warmer dough ferments faster, cooler dough takes longer.

You'll get a notification when bulk fermentation is complete. At that point come back home — you have about 30 minutes of active work ahead.

Window 3 — Be Home Again (about 30 minutes)

This is a short but important active window. Don't skip it or rush it.

Window 4 — Go Live Your Life Again (2–4 hours)

Final proof is another long passive step. The app will notify you 45 minutes before the proof ends — that's your cue to come home and preheat your oven to 475°F.

Window 5 — Be Home for the Finish (about 1.5 hours)

Window 6 — The Hard Part (2 hours minimum)

Cool your loaf completely before cutting. This is genuinely the hardest part of the whole process. Cutting too early releases steam and ruins the crumb texture. Set a timer and walk away.

Bulk fermentation and final proof times vary based on your dough temperature. Warmer kitchens mean shorter times. The app calculates the exact timing for your conditions.

You need to be home for roughly three separate windows totaling about 4 hours across the day. The rest of the time — up to 8 hours — is completely hands-off. Plan your bake day around those three windows and the whole process becomes very manageable. The app handles all the timing. Your only job is to show up when it tells you to.
